Location sharing and the "Always" permission
Your location is shared with dispatch only while you are On the clock, and with customers only while you travel to their job.

ArrivePing shares your live location with dispatch only while you are On the clock — the switch at the top of the Profile tab. When you go off the clock the app stops sharing and tells iOS to stop tracking.
Customers see even less: only your progress toward their own appointment, and only while you are travelling to it. Sharing to the customer stops the moment you arrive.
Why the app asks for "Always"
Your ETA has to keep updating while the phone is in your pocket or mounted in the van. With "While Using", tracking pauses whenever the app is in the background and customers see a stale ETA.
To check or change the permission: iPhone Settings → ArrivePing → Location. Choose Always and turn on Precise Location.
